This recipe brings you a delicious keto-friendly version of the highly sought-after chocolate chip cookies. These are perfect for satisfying your sweet tooth without breaking your ultra-low carb diet. And speaking of ultra-low carbs, the carb content of one cookie from this recipe is a mere 1.1 grams!

DRY INGREDIENTS:

  • 2 cups (200 g) almond flour
  • 3/4 cup brown sugar substitute such as pure stevia
  • 1/2 tsp baking soda
  • 1/2 cup sugar-free chocolate chips
  • 2 tbsp chopped pecans (optional)
  • Pinch of salt

WET INGREDIENTS:

  • 1/2 cup melted butter
  • 1 egg
  • 1/2 tsp vanilla extract (optional)

DIRECTIONS:

  • Preheat the oven to 325 F or 163 C
  • Whisk the dry ingredients in a bowl until well mixed
  • Add the wet ingredients to the dry blend
  • Mix well with a rubber spatula until it reaches a dough-like consistency

If you're a big fan of strawberry cheesecake but are unable to enjoy an occasional slice because you're following an ultra-low carb keto lifestyle, then this recipe is for you because it opens the door to an easy, guilt-free, delicious low-carb strawberry cheesecake recipe.

CRUST INGREDIENTS:

  • 1-1/2 cup almond flour
  • 4 tbsp butter
  • 2 tbsp brown sugar-free sweetener such as pure stevia

FILLING INGREDIENTS:

  • 1/2 cup sour cream
  • 1 cup hulled strawberries
  • 3 eggs
  • 3/4 cup sugar-free sweetener like pure stevia
  • 16 oz cream cheese
  • 2 tsp vanilla extract

TOPPING INGREDIENTS:

  • 8 oz heavy whipping cream
  • 1/4 cup of sugar-free sweetener such as pure stevia
  • Remaining hulled strawberries

CRUST DIRECTIONS:

  • Preheat the oven to 350 F or 177 C
  • Melt the butter
  • Add the almond flour and sweetener to the melted butter & mix thoroughly until it reaches a dough-like consistency
  • Spread the dough across the bottom of a greased, non-stick 8-inch springform pan and flatten to a consistent thickness using your fingers, spoon or rubber spatula
  • Place the pan in the preheated oven & bake for 10 minutes or until the crust edges begin to brown

FILLING INSTRUCTIONS:

  • Add the cream cheese to a food processor & blend until smooth
  • Add half of the remaining strawberries and the other filling ingredients to the cream cheese and blend until thoroughly mixed
  • Transfer the filling to the springform pan on top of the pre-baked crust
  • Bake at 350 F or 177 C for 60 - 90 minutes or until the filling becomes firm and is no longer "jiggly"

TOPPING DIRECTIONS:

  • Pour the heavy cream & sweetener in a stand mixer bowl and use the whisk attachment to whip the cream until it forms stiff peaks. Be careful not to overshoot the target because if you do, you'll wind up making butter instead of whipped cream
  • Place the whipped cream in the fridge while the filling is still baking
  • When the filling is fully baked, remove the pan from the oven and allow it to cool to room temperature
  • Spread the whipped cream on top of the filling 
  • Cut the remaining strawberries in half and distribute them evenly on top of the whipped cream
